Paleo Snacks Super Fast and Easy Gluten-free Recipes

Paleo. Primal. Gluten-free. Grain-free. Are you on the bandwagon? I jump on and off the paleo wagon as I feel like it. Mostly, I eat what I like–hamburgers, eggs, salads, kale, peanut butter, cheese, kefir, wine, chocolate–cookies.

I just don’t eat all the cookies all of the time. I eat a cookie, some of the time. I make my focus meat, eggs, or other high quality protein, veggies, and a goodly amount of high quality fats. Fats from pastured meats, eggs, raw milk, cheese, butter, coconut oil, and sometimes an omega-3 fish oil supplement.

Eat to be strong, lean, healthy AND eat for pleasure. Tweet that!

Keeping things simple and not depriving yourself of foods that you like keeps you from binging. Keep the majority of your food un-processed and relatively low sugar. Eat a little bit of what you love every day. Dark chocolate anyone?

Keep in mind, these paleo snacks are NOT fancy gourmet meals. And, I am NOT a cook. Not that I can’t cook, I just would really rather put my time into other things. Like lifting weights, dancing, and sex (yeah, those are pretty much my priorities in life).

So, if you’re like me and hate cooking, or you just want some ideas for simple, easy, healthy, and fast paleo snacks/light meals–here you go:

Coconut Butter

I love coconut in all it’s forms, coconut oil, coconut flakes, coconut butter, coconut milk (the full fat kind in the can–not the watery stuff sold in the refrigerated section), coconut water, and pretty much anything made with coconut.

You can buy this, but it’s really easy to make.

  • 2 cups coconut flakes
  • 2 teaspoons coconut oil
  • pinch of sea salt
  • 1ts. vanilla

Place it all in a food processor and process, process, process. You may need to add more coconut oil and scrape down the sides periodically as you go.

I like to put this on dark chocolate or eat it by the spoonful.coconut butter on dark chocolate

Be careful with this one if you’re watching your calories. This is NOT low calorie, but it’s oh so tasty! Did I mention that I love coconut?!

Apple Slices with Almond Butter and Cinnamon

Slice an apple, sprinkle cinnamon, and grab a glob of almond butter. Fast. Easy.

Spicy, Curry Jicama Slices

If you’ve never had these tasty tubers from Mexico, you need to try them. Kind of like a cross between and potato and an apple (no really– they’re good).

Peel, slice, sprinkle with sea salt,  curry powder, and cayenne powder.

Bulletproof Coffee or Hot Chocolate

First you get your husband, or someone other than you, to make you some really good coffee in a Chemex (cuz coffee made by someone else always tastes better). Then, add a teaspoon to a tablespoon of coconut oil and unsalted pastured butter. You can add lots more coconut oil and butter if you wish. It just depends if you want to eat anything else that day! Blend in a blender. Sprinkle cinnamon on top. Great energy booster!

Wasabi and Pickled Ginger Hard Boiled Eggs

During my second pregnancy I always craved sushi so when I couldn’t get a hold of sushi (and I did eat sushi while pregnant), I discovered this took care of my craving. I get powdered wasabi to which you just add a little hot water to make a paste. Then add some preservative free pickled ginger.


I usually get this as a treat from our local farmer’s market with no preservatives or nitrates.
